I am a
little girl at heart and I still get very excited when it comes to Halloween.
Here are
some red velvet Halloween themed cupcakes I baked this morning. They are
extremely easy to do and really yummy too!
I took the recipe from Jemma from Crumbs & Doilies and added a bit of Halloween
fun to it.
To make 24 cupcakes
you will need:
235g Self raising flour
15g Cocoa powder
250g Caster sugar
3/4 tsp Salt
270g Soft unsalted butter
4 Large free-range eggs
3 tbs Buttermilk
1tsp Red food colour paste
1 tsp Vanilla extract
3/4 tsp Bicarbonate of Soda
1.5 tsp Cider vinegar
200g of plain or dark chocolate
150g of white chocolate
First you will need to get a large
mixing bowl a sift the flower, cocoa powder, caster sugar and salt. Mix the dry
ingredients and then add the soft unsalted butter and eggs and stir until
everything is nice and smooth. If you have a kitchen aid your life will be much
easier but don’t worry if you don’t, you can do it by hand like I did, it will
just take longer.
Next mix the buttermilk colour paste and
vanilla extract into a small bowl. It is very important to get a good colour
paste. I bought one from Dr oedker and as you can see the red velvet cupcakes didn’t
come out very red.
Pour the buttermilk mix into the bowl
while stirring, and keep stirring until you have an even paste.
Now in a separate bowl mix the
bicarbonate of soda with the cider vinegar and after it has stopped fizzing
pour into the cupcake mix and stir.
When the mix in nice and smooth, line non-stick
baking tray and fill the cupcake liners until they are 3/4 full. Set the oven
to 170C and bake for about 23 minutes.
As soon as the cupcakes are cooked leave
them to chill. Once they are cold you can start decorating them.
I opted for a very simple but yummy
finish. I basically melted 200g of dark chocolate and coated the cupcakes.
As for the spider webs I melted 150g of
white chocolate. I then put the melted chocolate into a piping sleeve and
started drawing over parchment paper.
These cupcakes are a lovely treat to
make for Halloween. If you do try out the recipe let me know how you get on
